From Our Kitchen To Yours: Cooking Tips with The Salvation Army
The Salvation Army meets the needs of senior citizens in a variety of ways. Educational classes, day care, recreation, seminars, and long-term residential services are just a few examples.
In Redondo Beach, CA, The Salvation Army is meeting both the physical and emotional needs of seniors through their incredible Meals on Wheels program, which delivers a good, healthy meal to homebound seniors once per day.
As Dawn Wright explains in the video below, The Salvation Army might be the individual’s only visitor each day. So Chef Junior – the man behind the meals – makes it count by cooking delicious and nutritious entrees, such as his stuffed chicken breast recipe.

Redondo Beach “Meals on Wheels” Recipe, from The Salvation Army Southern California Division
Stuffed Chicken Breasts
- 4 Boneless/Skinless chicken breasts
- Seasoning of your choice (no added salt)
- Box of Stuffing Mix
Take the chicken breast and slice a pocket on the long side of the breast. Rinse in cold water and pat dry. Make your favorite stuffing and add diced veggies, dried fruits, nuts or other special flavors. Fill the chicken breast pocket with stuffing. Place on sheet pan in oven at 350 degrees for 20 minutes or until juices are clear.
Serving suggestion: Place stuffed chicken breast on plate alongside rice pilaf and vegetables and then drizzle with chicken-flavored gravy.
Consider also using different meats such as boneless pork chops or turkey breast.
Also try stuffing wild rice in the chicken breasts instead of the stuffing mix.
- 2 cups of low-sodium chicken stock
- 2 tablespoons of cornstarch
Bring chicken stock to rapid boil. Meantime, mix the cornstarch with a little bit of cold water to dissolve the cornstarch. Add mixture to chicken stock and stir until thickened.
