Avocado Chicken. Don’t mind if I do.
The countdown to the weekend begins! But before you head off we want to share another delicious recipe from The Salvation Army’s Emergency Disaster Services (EDS) Cookbook, in honor of National Preparedness Month.
When disaster strikes, it can turn people’s world around in a matter of seconds. The next steps of recovery are crucial. The Salvation Army’s EDS program recognizes that and is present at almost every disaster site, providing emergency assistance including food and shelter for survivors, first responders, and emergency personnel.
Serving a little comfort food can help give the energy and much needed comfort to those working to get back on their feet as quickly possible.
So here is another mouth-watering recipe that we hope you enjoy. I don’t know about you but I can hardly ever resist a menu option that has “avocado” in it!
2 cup chicken, cubed and cooked 1 TBSP. minced onion
¼-cup raisins or more as desired ½-cup sour cream
½ -cup mayonnaise ¼ tsp. salt
½-tsp. curry powder 1/8 tsp. pepper
1 cup diced avocado
Combine and stir ingredients until well mixed and somewhat creamy. Delicious served in pita bread. Serves 8.
